One of my goals this year is to share more of our family favorite recipes. The other day we had a CHILLY day. The high was 7 degrees and although I’m not a fan of the cold and snow, I love taking days like that and making a warm, yummy soup in the crock pot. Nothing is better than watching the snow fall outside while you enjoy a piping hot bowl of soup. This recipe for Chicken Tortilla Soup is staple in our home.

How to make Chicken Tortilla Soup
In a crock pot, combine:
- 2 Chicken Breasts, chopped
- 3 bell peppers, chopped ( I like to use 2 red and 1 yellow but feel free to use what you have on hand)
- 1 onion, chopped
- 1 jalapeno, minced
- 1 bag of frozen corn (you can sub for canned corn)
- 2 cans of pinto beans (drained and rinsed)
- 2 cans of diced tomatoes
- organic chicken bone broth
- 4 Tablespoons of Worcestershie (this is the secret ingredient)
- Seasoning (salt, chili powder, cumin, bay leaf and oregano)
This dump and go soup is perfect for a chilly night. I serve ours with sliced avocado, shredded cheese, black olives, a quirt of lime and tortilla chips. If you are feeling a little extra, you can add a dollop of sour cream!
