Looking for a fun way to serve lunch? I threw this Chicken Salad snack board together over the weekend and it was a total hit! My kids love it when I display food this way. I think it’s because it looks pretty, and they get to pick and choose what goes on their plate. I love it because it’s an opportunity to clean out the fridge and make a meal look fancy! Shh…I won’t tell, if you won’t tell.
In a bowl I made my favorite Chicken Salad recipe (keep reading below for the recipe).
On the board I displayed:
- Snack Crackers
- Apple Slices
- Sugar Snap Peas
- Orange Slices
- Sliced Bell Pepper
- Chopped Walnuts
- Berries
Chicken Salad Recipe
- 1 rotisserie chicken shredded (you can also sub this for 2 cans of canned chicken)
- 1 1/2 apples peeled and chopped
- 1 cup grapes quartered
- 4 Tablespoons of mayo
- 2 Tablespoons of mustard
- salt and pepper
- 1/2 cup chopped walnuts (optional) The kids don’t like walnuts in theirs but I love it. So I put the walnuts on the snack board so those of us who like them could add them to our chicken salad.
