I love doing things that are unexpected. We are huge Big Green Egg fans in this house. We use our smokers all the time, and every once in awhile we love to throw a curve ball and make dessert on our smoker. This past weekend seemed like the perfect opportunity to make a Blueberry Buckle Recipe on the Big Green Egg. This recipe is perfect for breakfast, lunch, dinner or dessert. And it is super fun to make when you have company over…imagine their faces when you lift the lid to find dessert was cooked on the grill!
How to make Blueberry Buckle on The Big Green Egg
Set the Egg for 375 degrees
In a large bowl combine:
1/3 cup sugar
1/3 cup vegetable shortening
1 large egg
½ cup milk
2 cups flour
2 tsp. baking powder
½ tsp. salt
2 heaping cups of fresh blueberries
Pour batter in a greased 8×8 baking dish.
Top with:
- 1/3 cup sugar
- 1/3 cup of light brown sugar
- 1/3 cup flour
- ½ tsp. cinnamon
- ¼ cup butter, room temp.
Cook on the Egg for 45 minutes. Do the toothpick test to make sure it is cooked all the way through.
This recipe is a crowd pleaser! Its not-to-sweet and has a little bit of a smoky flavor. We went all in and ate our for dinner….and dessert….and then leftovers for breakfast the next day. Yup, it is THAT good!
