Are you feeling lucky? St. Patrick’s Day is such a fun opportunity to do something special for the kids. Since the girl’s are obsessed with all things RAINBOW, I thought surprising the kids with a Rainbow Themed Breakfast Board would be fun!
Here is How I made an Easy Rainbow Breakfast Board
It all started with Green Pancakes! I made our regular pancake mix and then added 6 drops or so of green food coloring to them. No way I was going to stop there. I went searching through the refrigerator to find all the colors of the rainbow.
Here are some ideas for your St. Patrick’s Day Rainbow Board
Red: Strawberries, Raspberries, Cherries, Watermelon, Pomegranate Seeds
Orange: Tangerines, Orange Slices, Apricots, Cheddar Cheese
Yellow: Scrambled Eggs, Banana Slices, Waffles, Golden Kiwi, Pineapple
Green: Kiwi, Green Grapes, Green Pancakes, Green Apples, Avocado
Blue: Blueberries
Purple: Purple Grapes, Blackberries, Plums, Raisins
I finished our Breakfast Board off with some chocolate golden coins and a cute St. Patrick’s Day Flag. I also made sure to put some bacon at the end of our rainbow….because chocolate is at the end of the kids rainbow, but BACON is at the end of mine.
If leprechauns take over your house for St. Patty’s, this would a fun breakfast for the kids to wake up to.
