Hello September! One of my favorite months here in Colorado. The weather starts to cool and the leaves begin to change. I love everything about Fall. The smells, candles, food, and the holidays. If you follow me on Instagram you know that I am a big fan of making Breakfast Boards for the Kids. They get an absolute kick out of it when I WHIM breakfast with a full spread of yummy food. For some reason, they eat more when I display it like this too. I think it’s because they get to pick and choose what goes on their plate. So when I came across this adorable mini pumpkin waffle maker, I died. I was so excited to make a Fall Breakfast Board for the kids with these mini pumpkin waffles.

What was in my Fall Breakfast Board
- Mini Pumpkin Waffles
- Bacon
- Apple Slices
- Clementine’s (peeled)
- Grapes
- Butter sliced
- Maple Syrup
- Strawberries
- Granola
One of my tips for making food trays like this is to use what you have. I like to grab the last bits of items in the fridge and throw it on the tray. It’s a great way to clean out the pantry/ refrigerator.
Pumpkin Waffle Recipe
- 1 can of Pumpkin
- 2 eggs
- 2 cups flour
- 1 1/2 tsp. Allspice
- 1 1/2 tsp. Baking Powder
- 1 tsp. Baking Soda
- 1/3 cup Brown Sugar
- 1/2 tsp Salt
- 1 1/2 tsp. Vanilla Extract
- 1 1/2 cups Milk
